A dinner tale. Food of Salento: history, anecdotes, recipes

Where does the “traditional” or “typical” food of Salento originate from? How and why was it brought to us in the form, taste and smell we know today? Through cultural appropriation, cross-pollination, circulation of ingredients and knowledges, food traveled across time and space, carrying the stories and philosophies of those who brought it to us.  
With the help of some extravagant and chatty guests joining from different times and geographies, we will trace the heritage of our food from its Paleolithic and Neolithic origins. Mouth-watering anecdotes, funny stories and delicious recipes, map the contours of what the Greeks, the Messapians, the Romans, the Byzantines and the Normans contributed to our common table.
